Itty Bitty Kitty Adventures

Yes. We got a kitten. Tho we did get her about a month ago, I am now documenting all our little adventures with "Josie" the kitty cat. I acquired her from my aunt whose taking care of her son's, my cousin's, cat. This cat had kittens, 3 to be specific and I got one of them. The runt of the litter and the only girl. She's pretty awesome. Its what I wanted - a loveable, huggable, squishable kitty that snuggles. Feeling warm and cozy now? The Purr of little Josie is soo loud and vibracious (word?). She started sleeping at our feet under the covers at night. Now she precedes to sleep on my shoulder-head and curl up all cozy like. Litter training her was a cinch and so not messy- because she pees in the tub. And we found out that she likes to poop in the tub- usually only if she gets shut out of a room. I guess that might be her rebellious nature. Mommy doesnt poop in the tub- so I don't know where she gets that from. She loves our 2 dogs and plays with them ferociously. She can't wait till I wake up- to feed her and when I get home- to feed her. :) She loves me! She loves running in between my feet when I walk. Josie the Kitty is my little baby! PS the litter is flushable! woohoo! That was a selling point for me. So now we are a family of five! :) Loving it!

Pancakes for Dinner!

Since this is my first post in Oh forever- I figured it would be about the delicious dinner I made for the Hub and I. I have been craving pancakes for weeks (no I am not prego!) Since pancakes are usually not known for being the most healthy- I figured there are ways to make it nutricious. So being freakishly food conscious when it comes to animal bi product (not counting butter or cheese) which for these pancakes I used only organic butter (it was on sale). I googled vegan pancakes since I didnt have eggs at the house and at the moment I am not purposefully eating eggs. Simple recipe! I used oatbran pancake mix and the other ingredients it called for, substituted honey for the sugar and greased the pan with a little butter. Butter is best. I thawed out some frozen peaches and drizzled a little honey to taste, set out the Almond Butter and was searching for some vegetable product. Nothing. Ooh canned pumpkin in the back of the pantry. Warmed that up and added some cinnamon and a honey and there we have it (faux sweet potato mash)! The Hub at 5 and I was so happy he enjoyed my pancakes w/ peaches and pumpkin mash w/ almond butter and honey dish! Yay add that to the menu! It was easy and a success and I think there was some nutritional value in there!

Hopefully there will be more posts in the future more than just once every 2 years.
